A few items at home were missing, adjustments made...

sweet peppers & corn in place of carrots Coconut sugar in place of brown & regular sugar Brown rice Olive oil in place of vegetable oil

Next time I will add some celery and do riced cauliflower in place of brown rice. 1/2 the sugar would be good too

There are so many ways to adjust any recipe! Make it your own😀
